Awesome Raw Nut "Fudge"



About 2 days into my "no processed" diet, I wanted something healthy, yet chocolaty. Now! This makes for an awesome vegetarian sweet with no refined sugars in it. So it's kind of healthy, from a certain point of view.

I made this stuff on a whim... I probably couldn't duplicate it if I tried. But I WILL be trying. Again and again and again if I have to. All I did was combine about half a jar of cashew butter, a scant cup of cocoa powder (carob powder or raw cocoa powder if you want REALLY raw), three or four tablespoons of honey (dark agave nectar if you want vegan), and a cup or so of ground/chopped mixed raw nuts.


Then I mixed/kneaded it until it was about the consistency of fudge. Add more cocoa/carob if too sticky and more honey if too dry. Roll into little balls or bars and there you go! It kind of reminds me of Eatmore chocolate bars, but more chocolaty and less molasses-y.

This post has been entered into Traditional Tuesday: A sharing of ideas, recipes, etc... regarding traditional foods - nothing refined, nothing processed, no yeast, etc... I didn't make my own cocoa powder or cashew butter in the recipe above, but I could have. I hope it still counts. I think it's a great concept and encourage all to have a look here.

  1. Hi Mark! Of course this counts! We just don't want white flour, sugar, puffed rice cereal, etc. A few weeks ago we were getting posts of those kinds so we had to add some rules.

    Of course, if you'd like to make your own cocoa powder and share the technique, we'd be happy to hear it! (I do make my own seed an nut butter all the time, by the way :-).
